Preheat oven to 400°
Slice the spaghetti squash in half lengthwise and scoop out the seeds with a large spoon. Drizzle the inside of the squash with olive oil and sprinkle salt and pepper to taste
Place the spaghetti squash cut side down on a baking sheet and use a fork to poke holes roast for 30 to 40 minutes or until golden brown on the outside. The time will vary depending on the size of your squash.
Remove from oven and flip the squash so that it's cut side up. When cool to the touch use a fork to scrape and fluff the flesh of the squash from the sides of the skin until it resembles a pasta like consistency
Ready to serve as is inside the skin of the squash, or plate and top with whatever spaghetti sauce you prefer
